2 eggs

300 ml of milk

3 walnuts

1 teaspoon of butter

1 teaspoon of olive oil

STEP 1

Beetroots should first be boiled in boiling water (or used already boiled) and then placed aside to cool. The flour, eggs, milk, and melted butter should all be combined thoroughly in a large bowl to get a creamy consistency. Beetroot should be thoroughly blended until it is creamy before being added to the mixture. The bowl should then be covered and placed in the refrigerator for about 20 minutes to rest.

STEP 2

After 20 minutes, add the teaspoon of olive oil to a frying pan and gently spread the oil with a piece of kitchen paper to distribute it evenly before cooking (this will prevent the pan from having too much oil).

STEP 3

Once the oil has been added to the pan, let it to warm before adding the mixture and cooking it until you see tiny bubbles beginning to form on the edges. Once the omelette is made, decide which side is “ugliest” and “pretty,” then arrange it with the “ugly” side facing you and the “pretty” side facing down. Next, spread the cheese, broken walnuts, and one or two spinach leaves on top.

STEP 4

Once everything has been carefully and gently rolled, place the omelettes in the refrigerator for about an hour to rest. Once it is done, carefully cut them with a knife to the desired size (my were about 2 inches or 5 cm).
