3 sundried or semi-dried tomatoes in oil (from a jar), drained and finely chopped

Finely grated zest 0.5 lemon

8 basil leaves

Small handful parsley, leaves picked and roughly chopped

½ tsp paprika

The aubergine and the courgette should each have eight thin slices, each around 2-3 mm thick. Peppers should be drained and rinsed, then quartered after removing any seeds and patting dry. Olive oil, garlic, and seasoning should be combined.

Bring a griddle to a medium-low heat. You’ll need to sauté the vegetable slices in batches. Brush each side with the garlic oil and heat for 2 to 3 minutes, or until soft and faintly browned. This might also be done outside on a grill. Place aside and allow to cool on a plate. The veggies can be grilled the day ahead and stored covered in the refrigerator. Let the vegetables come to room temperature before serving.
