An Interesting Fact About Beetroot

Did you know that beets were originally grown more for their leaves than for their roots? Instead of the bulbous root we typically associate with beetroot today, people in ancient times largely devoured the vegetable’s lush greens.

Beetroot leaves, commonly referred to as beet greens, are extremely nutrient-dense and high in vitamins A, C, and K as well as minerals like calcium and iron. The focus switched from eating the greens to the root component as a result of selective breeding over time. The root portion is now greatly adored for its earthy flavor and brilliant color.
